Ingredients
  • 1 cup red cherry tomatoes halved
  • 1/4 tsp. kosher salt
  • 1/4 tsp. granulated sugar
  • 1 Tbsp. olive oil
  • 1 Tbsp. jalapeno seeded, deveined and minced
  • 1 Tbsp. Lime Juice
  • 1/4 cup white onion minced
  • 1/2 cup Cilantro
  • kosher salt & pepper to taste

Instructions
  1. Preheat the oven to 450 degrees F.
  2. Place the tomatoes in a small mixing bowl and toss them with salt, sugar, and olive oil then, transfer onto a baking sheet.
  3. Roast tomatoes in oven for 12-15 minutes.
  4. Set aside. Preheat a fryer (or pot with oil) to 375 degrees F.
  5. Flash fry the cilantro for 20 seconds .
  6. Drain onto a plate lined with paper towel.
  7. Rough chop the roasted tomatoes.
  8. In a mixing bowl, combine, tomatoes, onion, jalapeno, lime juice, and season with salt and pepper to taste.
  9. Add crispy cilantro right before serving.
