From its opening back in March, SOL Mexican Cocina at Scottsdale Quarter has continued to generate buzz bringing in hungry Scottsdale eaters for their award-winning guacamole and margaritas. The brainchild behind the SOL concept, Executive Chef Deborah Schneider, created the menu with her interpretation of fresh, modern Baja-style fare.
She released her fifth cookbook for home cooks this year – The Mexican Slow Cooker. We’re excited to announce that one of our readers will win a copy of their own!
With the cooler months ahead, if you’re anything like me, you’re already jotting down winter slow-cooker recipes and making meal plans for the season. It’s my favorite time of the year for cooking… nothing quite satisfies like a warm dish that’s been simmering all day, scenting the house with spicy flavors.
The new cookbook includes recipes for soups, mole, enchiladas, carnitas, chile verde pork, side dishes and even desserts. Standouts from the mouthwateringly-colorful photos include the Sopa Azteca, a traditional chicken soup with tortillas and avocado (a giant bowl of this would make such a satisfying lunch as it’s bound to have leftovers), and the cover recipe – Pozole Verde that Chef Deborah recommends you garnish with fried pork skin and creamy avocado. Nom.
Throughout the rest of the cookbook, Chef Deborah also illustrates a slow cooker recipe for Carne Pibil, one of my personal favorite dishes that is always a crowd pleaser, and various tamale ideas.
