14 days of recipes for Valentine’s Day: Day 8 Flourless Chocolate Cake

No matter if you’re coupled up or single, we’re pretty sure you’ll still be hungry for some sweet treats no matter if you choose to celebrate the love-filled holiday or not. Who would pass up all that chocolate? Not us.

Throughout the 14 days leading up to the big day of hearts, kisses, and cupid, we’ll share a mix of recipes of food and cocktails appropriate for the holiday. It’s up to you if you want to share or not!
For today’s recipe, we’re sharing the ingredients for Flourless Chocolate Cake created by Arizona Grand Resort’s Chef Eric Finney.

DAY 8: Flourless Chocolate Cake

To impress your Valentine this year, whip up this decadent flourless chocolate cake, sure to wow even the harshest critics. Silky ganache topping takes this rich dessert over the top – and takes your Valentine right into your arms!

Ingredients: 

For the Cake:

  • 13 ½ ounces semi-sweet chocolate, chopped
  • 12 ¼ ounces unsalted butter
  • 15 ounces sugar
  • 9 eggs

For the Ganache:

  • 8 ounces heavy cream
  • 8 ounces semi-sweet chocolate, chopped

Method:

  • Preheat oven to 350 degrees and spray a 10-inch cake pan with cooking spray, then line bottom with parchment paper.
  • In a double boiler, melt chocolate and butter together. In a separate bowl, mix together eggs and sugar (do not whip).
  • Once the chocolate and butter are melted, add to egg mixture. Whisk together until incorporated and pour in prepared pan.
  • Place cake pan in a larger pan filled with water until it is halfway up the cake pan.
  • Bake about 45 minutes.  Cake should rise a little and be somewhat firm on top.
  • Cool overnight in refrigerator.
  • To remove cake from pan, run a knife around the edges then place pan on top off hot stove and spin the pan until the bottom is warm but not too hot.
  • Turn pan upside down on a cake cardboard circle and slightly slam pan on the counter. Cake should pop right out. Leave upside down because the bottom of this cake is the top.
  • Bring heavy cream to a boil and pour over the chopped chocolate.
  • Stir until chocolate is melted (do not whisk). Pour over chocolate cake until all is covered.
