With a “Farm to Table” mentality from California to Scottsdale, Arizona, Calistro buys from local farms, preparing everything in-house from scratch. On the dinner menu, you’ll find starters like Sweet Potato Croquettes (Tempura sweet potato, spices, citrus crema | $10), Roasted Local Goat Cheese (Crow’s Dairy goat cheese, sweet peppers, concentrated tomato, toasted baguette | $11), and Vegetable Ravioli (Braised local greens and ricotta filling, pickled garlic cream, tomato confit, crispy basil | $12). A variety of soups, salads and flatbreads are also available. For entrees, you’ll find dishing including the Atlantic Salmon (Grilled then hickory smoked to order, sweet potato mash, braised romaine, pickled fennel, fig gastrique | $26), Pork Roast (all natural pork,  wood roasted, harissa spiced, sweet potato mash, chimichurri sauce, red wine reduction| $27), and a few Hand Cut Papperdalle Pastas including Duck Confit Sugo (Wood roasted confit of duck leg, duck confit ragout, madiera cream, baby spinach, fontina cheese | $24).
