New Cookbook: 300 Sensational Soups by Carla Snyder & Meredith Deeds

Now that it’s finally getting chilly in the Valley, warm, wintery soups have made their way into my weekly menus at home. Rich, beefy soups and stews are my favorite and if the weather was forgiving, I could eat them all year. To me, there’s nothing more comforting that a warm bowl of soup, a big blanket and comfy socks, and the scent of a fresh loaf of bread baking in the oven.

300 Sensational Soups, a new cookbook written by Carla Snyder and Meredith Deeds released in October and published by Robert Rose Inc., features a myriad of soup, stock and chowder recipes whether you’re looking for a quick dish for family night or an elegant soup for dinner guests. No matter the season, there’s something here to enjoy as they share recipes using fresh, seasonal, garden vegetables, hearty soups for the cooler months and chilled recipes for the warmer seasons.

Carla Snyder is an artisan baker, food writer and culinary instructor. Meredith Deeds is also a well-respected culinary instructor and food writer. Before plunging into the recipes, you’ll find a section in the book from them outlining stock basics, how to prepare different stocks and how to properly store them for future uses. Each recipe includes a helpful tip or variation as well as a description of the soup and its flavors. Even a novice cook can follow their easy-to-understand instructions.

You’ll find recipes like the rich Beef and Ale Soup, Oxtail and Barley Soup, Saffron Paella Soup, Vegetarian Harira (one of my favorite soups), and even dessert soups like Banana Soup with Raspberry and Mint Relish, and Frozen Hot Chocolate Soup.
