It’s the summer of Tiki and nothing makes us more thirsty than that simple feeling of nostalgia—thinking back to the days when the bones of our current restaurant once housed the iconic Trader Vic’s of Scottsdale. With that inspiration comes the Citizen Public House Tiki Dinner; our mixologists and chefs joined forces to create the perfect throwback cocktail pairing dinner filled with flavorful spirits and Polynesian treats.
First Course| Charred beet carpaccio, roasted pineapple purée, coconut vinaigrette paired with Allspice and vanilla infused Fortaleza Blanco, Lillet Blanc, honey-mango purée,
Mediterranean tonic float, chili accented mango
Second Course| Lemongrass steamed snapper, lemongrass star fruit, papaya paired with Tahiti Drink! {It’s the bestselling drink on the island for a reason}
The Scarlet Ibis rum, pineapple, passion fruit, orange & vanilla
Third Course| Smoked duck “spam”, pickled pineapple, Hawaiian roll crumb, plantain emulsion, duck crackling paired with Compressed mango & vanilla Rhum Clement, lime juice, grilled pineapple shrub, bruleed pineapple
Fourth Course| Beet crusted & seared ahi, habañero meringue, jack fruit vinaigrette, garlic & arugula purée, kumquat paired with Smith & Cross rum, Ancho Reyes chili liqueur, Nonino Amaro, Homeboy’s hot sauce,
cilantro oleo-saccharum, grapefruit juice, candied Kumquat
Fifth Course| Banana wrapped Kahlua pork, corn bread yucca slaw paired with Hamilton pot still black rum, Zucca Amaro, ginger-orange juice, demerara syrup, grilled fig
Sixth Course| Buttered coconut mochi, rum banana anglaise paired with Banana juice, brown butter fat-washed Angel’s Envy, Olorosso Sherry, lemon vanilla oleo-saccharum
