On Wednesday, September 10th, Chef Kevin Binkley, will pair up with Arizona Culinary Institute Executive Chef Christopher Wolf for a one night only dinner. This exclusive six-course dinner will be seafood driven and will follow Chef Wolf’s culinary career and his favorite flavor profiles, but there will definitely be a Binkley twist peppered here and there.
Chef Wolf is no stranger to the Binkley’s kitchen, having spent many a busy season helping in the restaurant; he is quite familiar with Chef Kevin’s detailed and innovative cooking style. “Our friendship blossomed out of a mutual professional respect. I think our paths were always destined to cross,” said Wolf, who has worked at some of the same five-star restaurants as Chef Binkley, just at different periods.
The Bites
First| Panzanella Salad: bread, tomatoes, pickled onion, basil, chili pepper
Second| Seared Halibut: baby carrots, spinach, orange, chervil, chanterelle mushrooms
Third| Seared Diver Scallop: cauliflower, almonds, sweet peppers, raisins, chickpeas, chorizo, parsley
Fourth| Jumbo Lump Crab Risotto: corn, bacon, chives, parm, mascarpone, black truffle
Fifth| Sweetbreads and Braised Pork belly duo: grits, porcini, figs, cippolini onion, arugula, braising jus
Sixth| Smores: graham cracker, chocolate, toasted marshmallow
The Bucks
The cost of participation is $98 per person, not including tax or gratuity. You can also opt for wine accompaniments for an additional cost of $50 per person.
The Basics
The open seating dinner will take place on 9/10/14 from 5 pm through 9:30 pm.
Binkley’s is located at 6920 E. Cave Creek Road in Cave Creek.
