Chef’s Table: Alexis Schulze shares her Zucchini Pasta Recipe

Her and her husband, Steven, created nekter Juice Bar after finding that many juice offerings in the market were sugar laden and rife with preservatives.

After feeling a little defeated, they decided to do something about it and created the concept of a neighborhood juice that really focused on the ingredients, reasonable pricing and tantalizing flavors. Alexis’ day begins and ends with healthful choices and she is ensuring that her children have appreciation for and taste for natural food and ingredients. She has graciously shared one of her family’s favorite dishes that makes a frequent appearance on her Chef’s Table with us; Zucchini Pasta.

Zucchini Pasta

This is a simple kid friendly sauce as is but you could sneak in some sautéed veggies since you're puréeing at the end. Carrots or red bell peppers will sweeten and add depth of flavor.
Servings 4-6 People

Ingredients

  • 4 whole zucchini spiralized
  • 1/2 whole onion
  • 2 Tbsp olive oil
  • 4-6 clove garlic
  • 1 Tbsp basil
  • 1 Tbsp oregano
  • 1 box Pomi strained tomatoes
  • 1 Tbsp tomato paste
  • 1/4 cup red wine

Instructions

  1. Chop onion and saute in olive oil until softened and slightly caramalized
  2. Add the garlic cloves until softened, taking care not to brown
  3. Add in the basil, oregano, strained Pomi tomatoes and tomato paste
  4. Add in the red wine and allow the sauce to simmer for about 10 minutes
  5. Saute your spiralized zucchini while your sauce is simmering
  6. Once the sauce is ready, puree in a blender
  7. Top your zucchini with the sauce, plate and enjoy.

Alexis shared, “I love to make this for my kids – it tastes just as good as spaghetti and tomato sauce, but it is a healthy version of it. I’m able to sneak in many servings of greens easily without them noticing (zucchini pasta, fresh veggies in the sauce), and they always go back for seconds!”
