Jan D’Atri’s Beer Candied Bacon

Jan D'Atri's Beer Candied Bacon

Course Dessert

Ingredients

  • 1 pound thick cut bacon
  • 1/2 cup brown sugar
  • 1/3 cup dark beer Jan uses Stockyard Oatmeal Stout
  • 1/8 tsp. Cayenne pepper
  • pinch course salt

Instructions

  1. Preheat oven to 375 degrees.
  2. Line a rimmed baking sheet with aluminum foil.
  3. Place a wire cooling rack or oven rack on top.
  4. Arrange bacon on the rack.
  5. Cook for 10 minutes.
  6. In a bowl, combine brown sugar, beer and cayenne, whisking to form syrup.
  7. Arrange bacon on the rack.
  8. Cook for 10 minutes.
  9. Remove from oven and brush one side of the bacon with the beer syrup.
  10. Turn bacon over and brush the other side with syrup.
  11. Return to oven and cook for 7-10 minutes.
  12. Repeat process until bacon is browned and syrup is used up. (Do not burn the bacon.)
  13. Cool to allow bacon to harden, about 10 minutes.
