Turkey, Peas and Pesto Sandwich

Ingredients

  • 2 Oroweat® Sandwich Thins® Rolls 100% Whole Wheat rolls toasted
  • 1/2 small onion sliced
  • 2 Tbsp. white wine vinegar
  • 2 Tbsp. butter
  • 12 ounces frozen peas
  • 1/4 tsp. salt
  • 1/4 tsp. Black Pepper
  • 1/2 cup pesto
  • 8 ounces roasted turkey sliced

Instructions

  1. Toss the onion and vinegar in a small bowl.
  2. Let sit until the onion is tender and bright pink, 3 to 5 minutes.
  3. Meanwhile, heat the butter in a medium skillet over medium heat.
  4. Add the peas and ¼ tsp. salt and ¼ tsp. pepper and cook until heated through, 5 to 7 minutes.
  5. Mash until the peas hold together.
  6. Divide the peas, onion, pesto, and turkey among the rolls.
  7. Serve open faced.
