Desert Smoke 3-course menu at Posh on October 4th

Monday, October 4thPosh Restaurant in Scottsdale, hosted “Chef 4 a Night” featuring a menu prepared and created by Tony Morales of Desert Smoke BBQ.

The menu featured 3 courses for $29, and we can’t tell you how excited we were to sit down at this dinner… you’ll see why.

The Menu:

Amuse

Grits N Bacon

Yum. After this, we knew we were in for a treat. Everyone at our table begged for another serving even after the meal was over!

1st Course

Smoked Duck Confit, Chinese Style Pancake, Crème Fraiche Caviar

Smoked Duck Confit, Chinese Style Pancake, Crème Fraiche Caviar

We loved the smoked duck confit… even a guest who isn’t a duck fan, cleaned their plate. The Chinese Style Pancake was absolutely delicious all on its own, but was a fantastic vehicle for the rest of the dish. Mmm…

2nd Course

BBQ Brisket Sous Vide, Rainbow Fingerling Potatoes, Poached Egg and Crispy Shallots, with a Desert Smoke Demi

BBQ Brisket Sous Vide, Rainbow Fingerling Potatoes, Poached Egg and Crispy Shallots, Desert Smoke Demi

I’m already a big fan of Desert Smoke BBQ’s Sweet & Spicy Sauce, so this dish had already won me over. But, the love didn’t stop there. It was everything I love in a dish… and a classy take on Southern barbecue. Getting it all in one bite = Heaven.

3rd Course

Belgian Waffle, Maple Bacon Sorbet, Maple “Bombs” and Chocolate Whipped Cream

Belgian Waffle, Maple Bacon Sorbet, Maple “Bombs” and Chocolate Whipped Cream

TO DIE FOR! Bacon, maple syrup, and waffles… you can’t go wrong there. My only complaint? I wish there had been more… and more… and more and more. The waffle was so light and fluffy, I could have had these all on their own. The maple bombs added a fun-quirky element to the plate and were the talk of the crowd (literally!). Delicious.

The verdict: Tony is a genius and we’ll most definitely be present the next time he’s cheffing. And, we’ll start a petition to have his 3rd course make a second appearance.
