Looking for something light, fresh and seasonal? Thirsty Lion Pub & Grill has created a summer menu that focuses on seafood and fresh vegetables. They have even added two refreshing cocktails to help cool you off.
The Bites
- Latin Shrimp Ceviche: Marinated in lime and olive oil with habaneros, sweet onions, avocado, cilantro, tomatoes and jicama; served with fresh corn tortilla chips.
- Fresh Heirloom Tomato Caprese Salad: Vine ripened tomatoes, fresh mozzarella, basil and spring greens with white balsamic vinaigrette, virgin olive oil, sea salt and aged balsamic vinegar.
- Grilled Romaine & Steak Salad: Charred heart of romaine, marinated grilled sirloin, cherry tomato, cucumber, blue cheese vinaigrette and shaved Parmesan.
- Quinoa & Black Bean Veggie Burger: House made with red and white quinoa, black beans, egg, jalapeño and pecorino Romano. Topped with avocado, arugula, tomato and sun-dried tomato tapenade, and garlic pesto aioli on a grilled brioche bun.
- Tempura Fried Green Beans: Crispy fried with sambal chili lime dipping sauce.
- Smoked Chicken & Pesto Pizza: Spinach basil pesto, house smoked chicken, sweet red peppers, chili flake, roasted garlic, a four cheese blend and arugula salad.
- Mesquite Smoked St. Louis Ribs: House smoked with our own spice rub, grilled with Newcastle BBQ sauce, roasted corn and red pepper succotash and hand cut fries.
- Seared Atlantic Sea Scallops: Flash seared with braised Tuscan kale, jasmine rice, fresh thyme and Meyer lemon beurre blanc.
- Strawberry Rhubarb & White Chocolate Cheesecake: Sour cream, fresh whipped cream, strawberry rhubarb purée and fresh sliced strawberries in a chocolate-hazelnut crust.
The Booze
- Raspberry Mint Mule-Jito: Fresh raspberries muddled with mint, lemon & lime, Bacardi Rum, Malibu Rum, simple syrup and Reed’s ginger beer.
- Strawberry Pomegranate Sangria: Merlot wine macerated with strawberries, oranges, crème de cassis, pomegranate liqueur, cinnamon, and served over ice.
