New Farm-to-Table Restaurant Opening at The Wigwam

The Wigwam, one of West Valley’s resorts, is kicking off the New Year with a bang! Friday, January 14th, The Wigwam will debut its newest restaurant: Litchfield’s.

Litchfield’s will replace the resort’s former signature restaurant, Red’s Steakhouse, and will offer a menu featuring fresh, farm-to-table fare focused on seasonal cooking and ingredients that are grown, harvested and produced from sustainable and local Arizona farms and artisans.

James Beard Award-winning Chef Chris Bianco (behind the famed Pizzeria Bianco) played an integral role developing the concept for Litchfield’s and provided inspirations for the menu.

Chef de Cuisine Brian Cooper was selected by Chef Bianco to lead the new restaurant. Chef Cooper is an Arizona native and has held positions as Executive Sous Chef at Lon’s at The Hermosa Inn and Restaurant Sous Chef at T. Cook’s at The Royal Palms. “A real point of pride at Litchfield’s is that we’re partnering with the farmers, growers and artisans in our own backyard,” said Chef Cooper. “We’ve created the menu to use slow cooking styles and techniques that compliment the natural flavors of the simple ingredients used in each dish,”

The menu features small plates (designed for sharing), and big plates emphasizing on Arizona’s local meats priced between $16-$29.

The small plates menu offers dishes like Queen Creek Olives with Blood Orange and Crushed Chiles ($8), La Quercia Organic Prosciutto with Local Dates ($14), and Roasted Duncan Farms Beet Salad with Arugula and Honey Walnuts ($9).

The big plates menu offers entrees such as Double Check Ranch Chopped Steak with Sweet Potato Spaetzle and Trumpet Mushroom Gravy ($18), Wood Fired Pork Chops with Braised Cabbage, Wilcox Apple Sauce and Dates ($23), and Double Check Ranch Tenderloin with Garlic Roasted Potatoes and Arugula ($29).

Side plates include Trumpet Mushrooms ($8), Wood Charred Green Onions ($6), Warm Red Cabbage with Caraway and Humboldt Fog Bleu ($7) and Fork Mashed Gold Potatoes ($5).

Fresh baked desserts and bakery items will also be available.
