Oh yeah, the “Wine Wednesday” experience just received another excellent option in the Ahwatukee Foothills.   Namely, it was a pleasant surprise to see that Hillside Spot just added Baileyana’s Firepeak Pinot to their wine list.  This is a prime example of the wines of the San Luis Obispo (SLO) region also is a perfect complement to Hillside’s cuisine.

SLO wines (especially the Edna Valley ones) have been steadily improving over the last 10 years, so to see this item pop up on another wine list is not too surprising.  There has been a steady increase in the acceptance of SLO’s hard work and the decision keep releasing reasonably priced SLO Pinot Noirs is starting to pay off.  The addition of this one to Hillside’s menu is well founded!

With a fuller body and more lingering finish than others, Firepeak pairs very well with most of Hillside’s Southwestern and Mexican influenced menu.  This also adds a little more complementary spice to just about any item you can select from their extensive repertoire.  We tried it with Fish Tacos, and also with Chicken Cacciatore, and found it to be flexible and savory.

This is a prime example of what a good Pinot is supposed to be, simply work with a plethora of menu selections.  Sure, a Pinot that is a little lighter may be a better choice with fish, but the Firepeak is just balanced enough to keep the Pinot promise, “Be a nice match to the widest selection of cuisine”.  With their 2017 vintage it’s a wrap.

Hillside has it on the wine list for $50 a bottle.  That is why the half-price wine Wednesday option is perfect.  Being able to experience this selection for $25 simply adds to the treat, even if it is the middle of the week.
