Super Tuscan ala Paso Robles: Eberle Full Boar Red

A fascinating wine from the Paso Robles area of Central California is Eberle Winery’sFull Boar Red”. It’s blended with the grapes similar to wines that are often referred to as Super Tuscans. This blend includes a healthy percentage of Cabernet Sauvignon along with smaller amounts of Sangiovese, Barbera, Zinfandel, and Tempranillo. Yep, winemaker Ben Mayo knows how to put together a Super Tuscan that has a lot of character.

In addition to being able to find it at AJs for under $15, the Full Boar Red offers up a floral bouquet with plumb and traces of melted butter. Its full bodied flavors present an “el largo” tannin attack with fruit and pepper plus a backbone of medium acidity.

Full Boar Red will pair perfectly with Italian dishes that contain sausage and other spicy meats. Its acid base holds up well with cuisine containing marinara sauces topped with a layer of grated cheese. Full Boar Red, as its name implies, is big red wine that goes best with food, not solo.

In view of its affordable price, this wine is an excellent candidate for an “everyday red wine” to keep around for take-out Italian dinners, pizza, or spaghetti. You can decide if it’s your choice for a “household table red” by comparing it with others from the somewhat limited selections of North American Sangiovese wines.

Chill in the fridge for about 30 minutes before serving (60-65 degrees). It will also work out well as one of those bottles that occupy the kitchen rack for informal occasions.
