Friday Bites with Jeremy Wilson

When Jeremy Wilson joined the Magnuson Papago Inn Scottsdale two months ago, the on-site restaurant, Hole in the Rock, had been closed for around two years. He came into the kitchen and was presented with just a rough draft of the menu based on what the new owners had in mind for the space. He took his experience from the Scottsdale Princess and created a smoky, hearty menu that appeals to locals and travelers alike.

The restaurant has a mid-century feel that if you know me makes my retro heart all aflutter. It is all intentional as the property dates back to 1964 and the owners really want to honor that. The time represents something simpler, slower if you will. The goal is to have the space be a place where locals feel comfortable coming in and embracing it as their neighborhood hangout. The food is comforting and the menu offers a variety of traditional favorites like a classic wedge salad, a BLTA, grilled cheese and the bacon cheeseburger is one of the best I have tried.

Expect to see some seasonal change on the menu as the weather starts to cool. What’s more classic than meatloaf and mashed potatoes? You’ll find that and a few more surprises coming in the fall, but don’t wait to check out this refinished space and see what Chef Jeremy Wilson is cooking up! Until then, check out some of Chef Wilson’s favorite spots in the Valley.

Friday Bites With Jeremy Wilson of Hole In The Rock

Best Place to Impress Out of Towners | Paradise Valley Burger Company
This place serves up some of the best burgers I’ve ever had. They have some straight-forward options, but the creative ones like their PB&J Burger are really good. They only do burgers and tacos there, and they do hem really well.

Best Valley Views | Hole in the Rock
Hole in the Rock has one of the best-unobstructed views in the Valley. (He may be a little biased…)

Best Spot for People Watching | Fez on Central
This spot is so eclectic with a wide variety of clientele, which makes is great for people watching. On the weekends if you come in early for dinner you’ll be able to see the whole scene and vibe change as the night progresses. The vibe changes from a restaurant to almost a night club.

Most Unique Dining Experience | Orange Sky at Talking Stick Resort
Get a table along the window and you’ll get an amazing dinner while watching the sunset.

Authentic Arizona Restaurant | TEXAZ Grill
The whole aspect of this restaurant is Arizona to me. I remember passing by when I first returned to Arizona and I always saw tons of cars in the parking lot. They have been around forever and really represent Arizona to me.
