Bayonne prosciutto

Manchego cheese

honey

heavy cream
Instructions
Melt half of the Manchego cheese with heavy cream, salt and pepper in a saucepan and bring to a boil.
Take that mixture and cimbone in a blender and then chill.
Stuff the dates with the remaining Manchego, about 2 grams per date
Wrap the dates, 3 by 3, with one slice of prosciutto
Bake the dates in a 40 degree oven, then top with honey and rebake for about 1 minute
Plate your dates atop some of the chilled dressing
