Strawberry Ice Cream
  • 1/2cup milk
  • 3cups heavy cream
  • 1cup sugar
  • 1pinch kosher salt
  • 9 egg yolks
  • 1pint fresh strawberriesblended
  1. Bring milk, cream, sugar and salt to a scald in a saucepan.
  2. Slowly temper in whisked egg yolks and cook until nappé (coats the back of a spoon).
  3. Strain and cool over an ice bath.
  4. Once cool, add blended strawberries.
  5. Pour into an ice-cream maker and process according to the machine’s directions until it reaches the desired consistency.
