NCounter Cardinal Popper Deviled Eggs

Ingredients
- 1 slice bacon
- 1/4 cup cheddar cheese shredded
- 4 hard boiled eggs
- 1 Tbsp. chipotle mayo (or to taste)
- 1 Tbsp. cream cheese (or to taste)
- 1/2 jalapeno diced
- 1 Tbsp. green onions sliced
- salt and pepper to taste
Instructions
- Crisp up the bacon in a non-stick pan over medium heat until edges curl and bacon is crispy. Set aside. Wipe out the pan and heat over medium heat. Sprinkle shredded cheddar in tiny disks and cook until crispy and golden brown. Remove from the heat and cool in the pan.
- Cut the hard boiled eggs in half and remove the yolks from the egg halves into a small bowl. Mash the yolks with a fork until fine and crumbly. Mix with the chipotle mayo, cream cheese, jalapeño, diced bacon, green onions and salt and pepper to taste. Fill the egg halves with the yolk mixture and top each egg half with a bit of crispy cheese and pancetta.
- To color eggs just use a cup of red food coloring, ½ cup of hot water, and a tablespoon of white vinegar
