Christmas Brunch Casserole
This easy to prepare Christmas brunch casserole is the perfect combination of sweet and salty!
  • croissantsrough chopped
  • Tbsp. butter(more for baking dish)
  • 1/4cup green onionschopped
  • 1lb andouille sausagechopped
  • 1/2cup breakfast sausagesliced
  • 1/2cup baconcrisped and chopped
  • 1/2cup red bell pepperfinely chopped
  • 1/2cup sweet yellow onionfinely chopped
  • 8 large eggs
  • 3cups whole milk
  • 1cup heavy cream
  • 2cups pepperjack cheesegrated
  • kosher saltto taste
  • Black Pepperto taste
  • 1/2cup maple syrup
  1. Preheat the oven to 350 degrees F.
  2. Heat a large skillet to medium high heat.
  3. Add butter and sauté green onion, sausages, and bacon for 3-4 minutes.
  4. Add bell peppers and onions.
  5. Cook for another 3-4 minutes and set aside.
  6. In a large bowl, whisk together eggs, milk, and heavy cream.
  7. Add croissants and sautéed mixture.
  8. Add shredded cheese and season to taste with salt and pepper.
  9. Grease an 8×8 baking dish and pour mixture into it.
  10. Bake for 35-45 minutes.
  11. Allow to cool before serving. Drizzle with maple syrup and serve.
