Ingredients
  • 2packages Athens Mini Fillo Shells
  • 12ounces shoepeg corndrained
  • 1/2cup Sour Cream
  • 4ounces canned chiliesdrained
  • 1/2cup sun-dried tomatoesdrained and chopped
  • 1/2cup pepperonichopped
  • 1/2cup jalapeno cheeseshredded
Instructions
  1. Preheat the oven to 375 degrees.
  2. Place shells on a baking sheet. and set aside.
  3. In a medium bowl, combine the shoepeg corn, sour cream, chilies, tomatoes and pepperoni.
  4. Fill the shells with mixture.
  5. Sprinkle each shell with cheese.
  6. Bake in preheated 375°F oven for 5-8 minutes, or until cheese starts to melt.
  7. Remove from oven to wire rack to cool slightly, before serving.
  8. Serve warm or at room temperature.
