Ocean Prime’s Savannah Smiles Tart combines the sweet and tart flavors of the popular Girl Scout cookie and fresh, tart raspberries.

Ingredients
Pastry Cream
  • 4 1/2 cups whole milk
  • 1 cup egg yolks
  • 1 1/2 cup sugar
  • 1/3 cup corn starch
  • 1 vanilla bean split
  • zest of 1 lemon
Tart Shells
  • 4 boxes Savannah Smiles cookies
  • 8 ounces melted butter
  • 2 whole eggs
  • 12 3 inch tart molds
Raspberry Sauce
  • 2 cups raspberry puree
  • 1 cup water
  • 1 cup sugar
Whipped Cream
  • 1 quart heavy cream
  • 1 cup powdered sugar
Servings:
Instructions
For Pastry Cream
  1. Mix egg yolks with sugar and corn starch in a mixing bowl.
  2. Heat milk to barely a simmer with scraped vanilla bean and lemon zest.
  3. Slowly whisk hot milk into yolk mixture and then transfer back to pan.
  4. Continue cooking on medium heat until the mixture thickens.
  5. Cool in an ice bath immediately
For Tart Shells
  1. Blend cookies until they become a powder
  2. Mix with butter
  3. Whisk eggs and add to cookie mixture
  4. Spray tart shells with a nonstick spray
  5. Add 1/3 cup mixture to each mold, form to sides until even all around
  6. Bake at 350 degrees for about 8 minutes
  7. Cool and unmold
For Raspberry Sauce
  1. Combine in a pan and simmer until reduced by 1/3
For Whipped Cream
  1. Combine ingredients in a mixing bowl and whisk until you achieve stiff peaks
To Assemble
  1. Spoon raspberry sauce onto a plate. Place baked tart shell on top and then fill the tart with pastry cream. Top with whipped cream and decorate with fresh raspberries as desired.
