Old Town Gringos Cotija Elote Dip
Get that great smoky flavor of street corn in a perfectly creamy dip!

Ingredients
  • 1cup mayo
  • 3ears corngrilled
  • 1/8cup mild green chilesroasted, peeled and diced
  • 1/4cup cooked black beans
  • 1 1/2Tbsp. blended chipotle
  • 1/2tsp. chile powder
  • 1/2tsp. garlic powder
  • 3/4cup cotija cheesegrated
  • pinch smoked paprika
Instructions
  1. Roast corn on char broiler until kernels are starting to brown. Remove corn from grill and cut of the kernels.
  2. While corn is cooling mix all other ingredients in a large bowl. Add corn last and mix well.
  3. Sprinkle with a pinch of smoked paprika and Serve with fresh lime wedges and Tortilla chips.
