New Menu | Latin inspiration transforms Talavera at the Four Seasons Scottsdale

After a decade as a top Valley dining destination, Talavera at the Four Seasons Resort Scottsdale at Troon North has relaunched as a Spanish steakhouse featuring Latin-inspired cuisine, a new contemporary design and live music on select evenings.

Talavera’s new menu was created by Chef Samantha Sanz, who has worked with some of the Valley’s most acclaimed chefs and has been with Talavera for two years.

“My creation of the menu involved taking everything I am as a chef to bring these amazing Latin and Mediterranean flavors together and make bold beautiful dishes.”

The new menu focuses on traditional Latin ingredients and specialties such as paella, dry-aged steak, fresh seafood and tapas, many of which can be shared.

Guests can create their own charcuterie plate with a selection of Spanish meats and cheeses, including Jamón Ibérico de Bellota, one of the most prized cured hams in the world. Other meat and cheese options include serrano ham, chorizo, blue cheese and manchego.

Paella is offered in three varieties on Talavera’s menu.

One of the most classic dishes on the new menu is paella, perfect for sharing. Talavera offers a choice of seafood paella with clams, mussels, lobster and prawns; paella with chorizo, chicken thigh and pork belly; and a vegetarian paella.

“Paella in our family was a normal thing. Anybody going to Spain would bring back saffron. I grew up eating home-cooked paella prepared over an open fire,” said Chef Sanz, who grew up in her family’s restaurants in Nogales, Mexico.

As a Spanish steakhouse, meat is an important component of the menu. Talavera’s entrées feature certified Angus steaks, Wagyu beef, and pork and beef tomahawk chops.

For those who prefer lighter fare with Latin flair, seafood options include whole branzino with tomato confit and salmon in a saffron-shrimp broth.

Vegetarian options include the paella, a selection of Spanish patatas (potatoes), and dishes centered around beets, eggplant, radishes and radicchio.

For dessert, guests can indulge in the flaming tres leches cake, chocolate Marquesa cake with spiced mango chutney, cinnamon churros with warm chocolate dipping sauce and an Iberian cheese board.

Talavera has a new beverage menu designed to complement the cuisine. The new Gin Tonic Bar is inspired by the tapas bars of Spain and features the best gins from around the world in different styles and flavors. Talavera’s unique and thoughtful cocktails highlight a variety of fruits, botanicals and herbs, from thyme and cucumber to basil and lime.

Talavera’s beverage menu also features seasonal sangria, as well as sherry, beer, cider, vermouth and an impressive selection of wines from around the world.

Talavera’s Gin Tonic Bar offers a variety of cocktails featuring different styles and flavors of gin.

In addition to its a la carte menu, Talavera is offering Summer in Seville, from June 7th through September 16th, a menu for two for $98 per couple. The menu includes a porrón, a traditional Spanish glass wine pitcher, of sangria or a bottle of sparkling Cava, starters, tapas and paella to share.

The Gin Tonic Bar will host summer happy hour specials from 5:30 – 6:30pm including $10 Gin Tonics and discounted pintxos, small snacks that can be found at bars in Spain.
