If your family is anything like mine, there is always someone who cooks too much. I’m the gal that always way overshoots how much pasta we’ll actually eat. I mess up the portions of turkey, prime rib, and any other holiday feast dish. It ends up not being a terrible problem, as we always have a slew of leftovers. Top Chef’s Fabio Viviani created this punchy sandwich and as soon as I saw the recipe I made a sandwich fro my husband who loved it! The tender, buttery peas create a great base for the sturdy roasted turkey and the pesto and tart onion create an eye-opening flavor combination, so much so that you’ll feel months away from Thanksgiving!
