Prepare to Get Your Grub on At Grubstak
As a child, I had an absolute aversion to my food touching. I had to eat everything on my plate one at a time, couldn’t move on to the next thing until I had decided I was done with the first plate component. As a result of having a picky child and a chosen career in food journalism, I have gotten over most of my weird food ”stuff.” And it appears that happened just in time. A restaurant devoted to food combinations and stacking, GRUBSTAK, is opening in my neighborhood in a few short weeks.
What is GRUBSTAK All About?
GRUBSTAK, the newest restaurant moving into Gilbert’s Heritage Marketplace, is an upscale fast-casual concept that will have a varied menu, perfect for all tastes including tiny ones. All of the offerings are chef-tested and range from sweet to savory, healthy to indulgent.
You’ll be welcomed into the bright and cheerful space, thanks to two large walls of floor-to-ceiling windows. The rich wood accents, open seating, and covered patio make for the perfect gathering space for family and friends.
What Kind Of Food Can I Get At GRUBSTAK?
Every dish starts with a base of crispy waffle fries, roasted root vegetables or fresh crunchy greens. From there you’re invited to top them with your choice of braised-in-house proteins, fresh toppings, and your choice of homemade sauces.
Here are just a few of the combinations that you can choose from at GRUBSTAK:
The Grubstak | 50/50 waffle fries, Schreiner’s breakfast sausage, pork belly, cheddar cheese, grub gravy, fried egg
Gold Rush | 50/50 waffle fries, golden chicken, golden sauce, bleu cheese, carrots, celery
Grubatouille | Roasted root veggies, Parmesan-crusted zucchini and yellow squash, tomato sauce
Mac Attack Grubchetta™ | If a grilled cheese sandwich and bruchetta had a baby, you’d get a delightful Grubchetta. Mac ‘n cheese, tomato chetta, more mac – served with Shishito pesto
Give Me S’More | Cinnamon graham cracker bread pudding, marshmallow fudge sauce, brûléed marshmallow
If you are looking for something a little more adventurous, you’re able to “Grub Your Way” and build your own custom stak. There is also a slew of a la carte items, craft beer and wine selected intentionally to complement their menu.

When Can I Make GRUBSTAK My New Favorite Gilbert Spot?
GRUBSTAK will be opening on Monday, December 5th.
Hours
They will be open Monday through Friday from 10:30am until 9pm. On Friday and Saturday, you can visit them from 10:30am until 10pm and on Sunday from 10:30am until 8pm.
