Honor Amongst Thieves Shakes up Central Phoenix

I had the incredible opportunity to check out Stock & Stable just before they opened to the public and was completely dazzled by the food and ambiance. At the time, Honor Amongst Thieves (located above the restaurant) was in the final days of preparation before it too would be open to the public. The construction crew had just got done sanding the bar and was preparing it for staining, so we were unable to take a tour. (The dust was a hazard.)

I did get the opportunity to chat with Stephanie Tendler, head mixologist for both concepts. She shared with me the idea behind the space and quickly corrected me when I asked if it was going to offer speakeasy vibe.Speakeasy’s typically provide an array of prohibition era cocktails and that’s not what she’s going for with this brand. The idea is to offer more time-honored classics that have a modern twist, and if anyone has shown a record of creating innovative cocktails, it’s Stephanie.

Honor Amongst Thieves will be open daily from 6pm until close. You’ll love the rich wood-accented space as well as the laundry list of handcrafted drinks along with the delightful bar bites and cured meat and cheese boards created by Chef Joe Absolor, also of Stock & Stable.

Stephanie Teslar stated that she working hand in hand with Chef Absolor to craft a spectacular cocktail program that pieces together perfectly with his food menu. “He’s created a nose-to-tail American-style gastropub menu filled with great comfort foods, so my menus will include many similar ingredients and flavor profiles to create natural pairings, such as deeply flavored infusions and plenty of earthy, compact notes.” Most important, she says, these drinks are all about the flavor and creating a consistently great-tasting drink, not about spending 20 minutes on each one to convince people that it’s quality. “Just like our food, each drink combines top-quality ingredients and preparations, just without any of the pretension.”

Accessed via a staircase located around the back of Stock & Stable (as well as a second entrance hidden next to Stock & Stable’s kitchen), Honor Amongst Thieves patrons will discover a cozy 80-person space. Sidle up to the wooden bar top or settle into a comfy couch and soak in the intimate lighting and the complete lack of windows (like a true cocktail lounge should be). Then prepare to sip and savor your way through an artful menu of Cocktails, Martinis and Tonics, as well as unique offerings such as Cheekies and Citywides. “The menu reflects the space – dark, cozy, and whiskey forward,” Teslar says.
