Nielsen-Massey baking extracts for the holidays

We are very excited to announce a new giveaway with Nielsen-Massey, makers of some of the world’s finest vanillas and flavor extracts since 1907. Originally founded by Richard Massey, the company is still a family-owned operation run by the third-generation of Nielsens. Their high-quality products include pure vanillas and many other flavors available all across the world. In our parts, you can find them in your nearest Williams-Sonoma or locally at Sur la Table and Sweet Basil in Scottsdale.

Nielsen-Massey uses a cold extraction process instead of heat extraction to gently pull out the flavors and preserve the taste of these ingredients in their natural state. Cold extraction is much more delicate and takes a longer time to process — think weeks instead of days — but the benefits are evident in the finished product.

All of their products are all-natural and 100 % pure. I tested the same set for myself and immediately dug into the Madagascar Bourbon Pure Vanilla as soon as it arrived (you can never have too much vanilla on-hand, in my opinion). The 2 ounce dark, glass bottles are perfect for storing in the pantry and preserving quality (not to mention more health conscious than plastic too). The Madagascar Bourbon Vanilla smelled sweet and creamy as soon as I opened the bottle and added such a richness to my baking dishes. Pure, natural vanilla flavor made cookies, cakes and frostings more rich and decadent than store-brand vanilla extracts. You can definitely taste the quality here.

Second in the set was the Pure Chocolate Extract, crafted from fine cocoa beans and exhibits the flavor of very dark chocolate. It can be added to many dishes including beverages, desserts, sauces, and even spicy foods. Try pairing it with chili peppers for a unique twist. One tablespoon of their chocolate extract equals 1 tablespoon of unsweetened cocoa powder which is very handy if you don’t have it in your pantry. I used it in my favorite Nutella-banana frozen smoothie and it brought out a deep, chocolate flavor just as if I had added a square of unsweetened dark chocolate.

The Pure Almond Extract is just as good as all the others and pairs really well with sweet flavors of vanilla, chocolate, maple and butterscotch. If you’re a baker, you know how useful a good bottle of almond extract can be! Use it to create homemade ice cream or a delicious custard.

The Peppermint Extract is one of my favorites to use around the winter season and you’ll find that Nielsen-Massey’s does not disappoint. Crafted from the finest mint oils, use the extract for flavoring your teas or peppermint hot cocoa. I love using it to whip of a batch of my infamous white chocolate peppermint bark to give as edible gifts near Christmas. Nielsen-Massey even recommends adding it to savory dishes like pork or  lamb (lamb would be especially good ) and poultry.

Though the collection will run you a little higher than grocery store vanillas and flavorings, the quality surpasses all  and it’s always useful to have high-quality baking ingredients on hand around this time of year. Good-quality vanillas and extracts make all the difference in sweet and savory dishes.  Bonus, all of the above products are kosher, gluten-free, all-natural and allergen-free!
