Matt, 25, from Philadelphia, left his job to pursue a doctoral degree,  and will no longer be able to afford take out and eating out for every meal. It’s finally time for this foodie to funnel his passion to learn how to cook basic, healthy meals.

PhoenixBites Interview With Matt Crespi

PhoenixBites: Of all your favorite meals, what one dish would you like to learn to master?

Matt Crespi: Picking a single dish would be an impossible task, even if I were constrained to dishes with which I’m familiar.  The recipes I’m most excited to master are creations I’ve never tried before, never even heard of, maybe even combinations that don’t yet exist. Replicating favorites would be a fantastic skill, but exploration and discovery–and someday, even invention–are the real goals I associate with true mastery and to which I aspire.

PhoenixBites: Is there a person (chef, home cook, family member, etc.) that has inspired you to sharpen your culinary abilities?

Matt Crespi: When looking for culinary inspiration, I aim high.  Living in a city with two Iron Chefs has helped, as eating food prepared by Jose Garces and Masaharu Morimoto has challenged my assumptions about the limitations of food and flavor.  Looking beyond my hometown, I’ve been inspired by great chefs like Thomas Keller and Ferran Adria, who manage to make the unique and fantastical part of their daily routines.  I know I’ll never get to that level, but it doesn’t stop me from trying or hoping, much the same way children run around parks pretending to hit grand slams and win Super Bowls.

PhoenixBites: Any advice you can give to our readers who may be beginners in the kitchen?

Matt Crespi: If you’re anything like me, your only hope is to go on a reality television show and get help from a world-class celebrity chef.  But I was one of the worst cooks in the country, so you’re probably much better.  In which case my advice is simple: Fear not.  I’m told that’s the most frequently issued command in the bible, and it should be no different in the kitchen.  Fear not.  Don’t be afraid of making mistakes; don’t be afraid of trying something new; don’t be afraid of saying “I don’t know” and asking for help or looking something up.  Don’t be afraid of embarrassment; don’t be afraid of experimentation; and don’t be afraid of your results.  Improvement and greatness always come with the risk of temporary failure.  Prepare for it.  Learn from it.  But don’t fear it.
