Celebrate National Pina Colada Day with these pina colada inspired recipes

July 10th is National Pina Colada Day! Celebrate with some pina colada inspired recipes from the stars of Food Network. Each recipe is simple and easy enough to make at home!
Pina Colada Scallop Brochettes

Recipe is courtesy Sandra Lee of “Semi-Homemade Cooking with Sandra Lee”.

Ingredients include:
• 12 large sea scallops
• 1 (10-ounce) can frozen pina colada mix, thawed
• 1/2 cup light rum
• 1/2 teaspoon salt
• 1 teaspoon ground black pepper
• 1 teaspoon crushed garlic
• 12 ounces fresh pineapple wedges, cut into 1-inch pieces
• 1/2 cup shredded sweetened coconut, toasted

Pina Colada Yogurt Parfait

Ingredients include:
• 1/3 cup reduced-fat vanilla yogurt
• 1/2 cup crushed canned pineapple or canned mandarin oranges
• 1 tablespoon toasted coconut

Pina Colada Madeleine Cookies

Recipe is courtesy Ingrid Hoffman of “Simply Delicioso with Ingrid Hoffman”.

Ingredients include:
• 1 (18.25-ounce) box pineapple cake mix
• 1/2 cup (1 stick) unsalted butter, cut into chunks
• 2 large eggs, lightly beaten
• 1 cup milk
• 2 tablespoons dark rum or rum extract
• 1 cup flaked coconut
