Chef Todd Cooks Up New Fall Menu at T. Cook’s

Fall is in full force here in the Valley (with the exception of a few 90 degree days) and local restaurants are taking this as the cue to mix up their menus, making the most of autumn’s bounty. Chef Todd at T. Cook’s appears to have successfully created a new Fall menu that focuses heavily on our region’s traditional cooking methods, presenting them to diners in artful presentations.

“This season, I’ve completely left my comfort zone. The past year has been all about reinvigorating T. Cook’s. Now, it’s about seeing what age-old methods I can unearth and experiment with, and how I can keep our guests excited every time they join us,” said Allison. “For me, it’s about being authentic, not trendy. Everything on the fall menu is brand-new and right now I’m exploring Portugal; I look forward to changes or additions to the menu as I become inspired.”

New seasonal items from Executive Chef Todd Allison include Pan Roasted Branzino with shishito peppers, stewed tomatoes, fingerling potatoes, and Kalamata olives as well as Grilled Venison Loin served with roasted Sonoma apples, parsnip puree, Brussels sprouts and a 25-year old balsamic gastrique.

You can also expect to be dazzled by Chef Todd’s “Tapas from the Fireplace” section of the T. Cook’s menu. You’ll be able to indulge on items like Lamb Osso Bucco, Roasted Spanish Octopus, and Gambas Ajillo.

In addition to all of the exemplary dining options, T. Cook’s is also known for its amazing courtyard, as Royal Palms sits on a lush nine acres complete with Pink Peppercorn trees as well as orange, lemon, grapefruit and kumquat trees on the property. The bounty of these citrus groves can be tasted in Chef Todd’s dishes along with the herbs that are grown on the north patio garden just outside of the kitchen

T. Cook’s is open for breakfast from 6:30am until 10:30am on Monday through Saturday, and from 6:30am until 10am on Sunday. There is also a brunch service from 10am until 2pm on Sunday.

T. Cook’s is open for lunch from 11am until 2pm, Monday through Saturday.

Enjoy dinner service at T. Cook’s from 5:30pm until 9pm Sunday through Thursday and 5:30pm until 10pm Friday through Saturday.
